Sofiyani Pulav


These are just scribblings to myself, of recipes I want to try. They are mostly from old magazines. My mother has a huge collection of magazine cut outs of recipes.  I am jotting them down, before I get rid of the magazine stacks and the cut out collection. In the age of internet, with any recipe you wish at your fingertips, it doesn't seem very practical to hang on to this crumbling paper collection. I am actually going through the entire bunch, recipe by recipe, choosing what seems worth a try. Why am I bothering? Well! Considering the effort my mom must have put in over the last 10-15 years or so, to cut out each recipe and to paste them into our old record books and such, I think It's disrespectful to just simply throw them out, just because I have an internet connection. So I am putting in my share of hard work.

Once I try these out and if they come out well, I will post them with pictures in the recipe section.

Sofiyani Pulav

1.       Rice – 2 ½ c – soak 1 hr
2.       Cardamom
3.       Cloves
4.       Cinnamon
5.       Salt

Boil 1.5 litres. Add all, cook till 3/4th done. Drain, keep aside.

6.       Curd- 1 ½ c
7.       Ginger paste – 2.5 tsp
8.       Garlic p – 2 tsp
9.       Cardamom- 8
10.   Cloves – 5
11.   Cinnamon – 2
12.   g.cilly-2, slit
13.   lemon juice- 2 tsp
14.   salt
15.   ghee – ¼ cup

Mix all to make marinade

16.   Chicken Drumsticks -16

Apply marinade. Cook on low heat, till all curd is absorbed. Don’t change colour or break chicken. Add

17.   Almond paste – 3 tbsp
18.   Mava – 3 tbsp, crumbled

Stir in quickly and remove from heat.
arrange chicken in baking dish, spread rice . pour

19.   Ghee- ¼ c
20.   Milk 1 c

Cover with lid, seal with atta. Bake for 30 mins.

Caramel Rice

1.       Soak rice-  1 ½ c . 30 mis
2.       Oil -  3 tbsp
3.       Onion -1,  big, sliced

Cook till pink in oil, remove.

4.       Cashews - 10
5.       Sultanas -2 tbsp

Fry one by one, remove. Add

6.       Cumin seeds- ½ tsp
7.       bay leaf-2
8.       cloves-5
9.       cinnamon-3
10.   Black cardamom-3
11.   Black pepper- 8, crushed
12.   sugar- 1 ½ tsp

When sugar turns brown, add

13.   Ginger – 1”
14.   Rice
15.   Green chillies -3
16.   Curd – 1/3 c
17.   Salt

cook 2 mins.

18.   Water- 3 c

Cook till done. Cool 15 mins. Garnish with

19.   fried onion, nut n sultanas, capsicum and tomatoes.

3 P Pulao [paneer, potato and peanuts]

1.       Soak rice – 1 cup.
2.       Oil- 4 tbsp
3.       bay leaf-3
4.       onion-2
5.       ginger-1/2’

Sauté

6.       tomato puree- 225 gms
7.       salt
8.       g.masala- 1 tsp
9.       chilli pwdr-3/4 tsp
10.   turmeric-1/4
11.   coriander pwdr- 2 tsp

fry till dry.

12.   Fried potato pcs – 2

13.   Add rice n fry.
14.   2 cups water [ or less]
15.   Crumbled paneer- 200 gms

Cook till done. Garnish with

16.   Roasted peanuts- ½ c
17.    fried potatoes and Fried paneer pcs- 50 gms
18.   Tomatoes, sliced- 25gms

Chicken Biriyani in a Packet

1.       Basmati rice – 250 gms
2.       1 bay leaf
3.       3 cloves
4.       1 cinnamon
5.       Salt – ¾ tsp

Soak rice for 30 mins. Parboil till half done. Drain. Add 1 tbsp ghee/oil. Divide into 4 portions.

6.       Garlic- 10 cloves
7.       Ginger – 15 gms
8.       Coriander powde – 1 tsp
9.       Cardamom – 4
10.   Brown cardamom- 1
11.   Cloves -4
12.   Onion – 1 large

Grind all together.Mix with

13.   Thick curd – ½ cup
14.   Salt

Marinate.

15.   Chicken – 500 gms

Keep for 2 hrs. Fry/ saute the chicken in ghee/oil, covered, till tender. Divide into 4.

16.   Aluminium foil -4 pcs.

Grease the pieces. Place chicken with gravy, cover with rice.

17.   Yellow food color – a pinch + ½ cup rice – yellow color rice

Scatter on top.

18.   Milk- ¼ cup
19.   Saffron – ½ tsp

Mix together and sprinkle over each rice set.

20.   Kewra essence- few drops [optional]
21.   Ghee

Dot with ghee. Close each silver packet neatly. Bake in preheated oven at 180 for 25 minutes.

Serve with raita, pappad and pickle.

Calzones

1.       Flour- 2 c
2.       Curd- ¼ c
3.       Oil- 2tbsp
4.       b.soda-1/2 tsp
5.       Salt
6.       Warm water

Make dough. Keep for 6 hrs.

7.       Boiled potato-4 , small cubes
8.       Grated cheese- 50 gm
9.       Onion, chopped –2
10.   Chopped tomatoes-2
11.   Coriander leaves
12.   Salt
13.   Pepper

Mix together.

Roll out dough into 6 inch round. Keep filling on half. Fold over the dough. Seal the sides with wet fingers.

Deep fry on medium heat. Serve hot with sauce.

Malabar Porotta

1.       Eggs -2
2.       Milk
3.       Sugar – 2tp
4.       Oil- 1 tbsp
5.       Baking Soda – 2 pinch
6.       Salt
7.       Maida – 400gms

Make dough, keep for half hour.
Divide into 6 portions. Roll out into 3 inch round. Fold multiple times. Flatten into ball and roll into 7 inch round. Fry on low flame spreading plenty of ghee.

Scotch Eggs with Sausage Meat

1.       Sausage meat without skin – 250 gms
2.       Grated onion
3.       Bread crumbs
4.       Egg yolk -1
5.       Pepper
6.       Minced parsley
7.       Cream
8.       Nutmeg
9.       Worcestershire sauce
10.   Tabasco sauce

Mix together. Divide into four portions. Use wet hands to cover…

11.   Boiled eggs -4

…with mince mix, cover fully. Coat the scotch eggs in lightly beaten…

12.   Egg white -1

Coat in…
13.   Bread crumbs.

Deep fry in hot oil on low flame till browned crisp. Cut into halves and serve with a dot of tomato sauce.

Potato French Toast

Mashed potatoes
Coriander leaves
Green chillies
Salt

Mix all.

Apply on bread slices.

Dip in 

Beaten egg 
salt

Toast both sides in butter.

Kadai Paneer

1.       Oil – 250 ml
2.       Onion- ½ kg

Sauté onions. When brown add.

3.       Cumin seeds – 10 gm
4.       Coriander seeds– 10 gm
5.       Ginger garlic paste – 2 tsp
6.       Turmeric- 1 tsp
7.       Garam masala – 1 tsp
8.       Salt – to taste

Cook.

9.       Tomatoes – ½ kg
10.   Capsicum – 250 gms

When the oil separates. Add

11.   Paneer – ½ kg

Chicken with Lemon and Honey Sauce

1.     Chicken breasts, large-2, cut into strips

Batter- 3 tbsp cornflour, 2 tbsp flour, 1 egg, salt, white pepper
Batter fry the chicken. Do not brown.

2.     Oil – 2tbsp
3.     Ginger paste – 1 tsp
4.     Garlic paste – 1 tsp
5.     Sliced onion – 1 small
6.      
Stir fry.

7.     Stock- 1 ½ cup
8.     Salt
9.     Pepper
10. Lemon juice – 1 ½ tbsp
11. Honey – 2 tbsp

Boil.
12. Corn flour – 1 ½ tbsp + water

Keep stirring

13. Carrot juliennes – ½ small
14. Capsicum juliennes.- ½ small

Cook till thick. Add fried chicken.

Onion Soup with Vermicelli

Sauté onion – 6, in butter – 2 tbsp.

Cook for 3 mins.

Add flour – 1 tbsp. Cook.
Add hot milk – 100 ml.

Salt, pepper. Simmer.

Add vermicelli- 1 cup.

Cook for 20 mins, stirring frequently.

Add beaten egg yolk or thick cream- to thicken, if desired.

Watermelon Punch

1.       Strained water melon juice – 3 cups
2.       Pineapple juice – 1 cup
3.       Sugar – ½ cup

Mix n chill.

4.       Sprite/lemon flavored soda – 1 cup

Mix n serve with lemon slices garnish.

1.       Sauté veg, onion, ginger, garlic, green chillies.
2.       Add to mato puree, chilli sauce, salt, turmeric and garam masala.
3.       Add cooked noodles. Toss.
4.       Garnish with fried cashews, raisins and chopped coriander leaves.

Golden Bread Fingers

1.       Veg – 150 gms, minced [beans, carrot, capscum, onion, cauliflower]
2.       Maida – 3 tsp
3.       Cornflour – 3 tsp
4.       Chilli sauce- 2 tsp
5.       Garlic paste- 1 tsp
6.       Ginger paste-  1 tsp

Mix all together.
Apply mix on bread slices. Sprinkle sesame seeds. Fry in oil. Remove from oil. Cut into fingers. Fry again.
Garnish with grated cheese.

Cheese an onion scramble

1.     Cook potato – 2, cubes till half done and fry till browned.
2.     Cook Onion – 1 sliced and then red capsicum – 1 sliced, salt, pepper.
3.     Whisk eggs -6 with cream -75 ml, oregano – ¼ tsp
4.     Add to cooked onion. Cook till egg starts to firm,
5.     Take off fire; add potatoes and cheddar cheese grated – 75 gms.

Cheese soup

1.     Carrot – 1 c
2.     Celery – ¼ c
3.     Onion – ¼ c
4.     Chicken broth – 2 cups

Mince, mix. Simmer for 15 mins

5.     Mix milk- 2 c with flour – ¼ c
6.     Paprika/Pepper – to taste
7.      
Cook till thick. Add

Cheddar shreeded – 1 c

Mix in till it melts.
